Sweet Potato Bisque. Serves: 2. Submitted by the Beckers. Toss sweet potato in oil, salt, pepper, and brown sugar. Roast sweet potato and squash add 1 T butter to cover squash for minutes. Scoop out squash and let cool. In a large pot, heat olive oil. Add garlic. Add sweet potato, squash, and broth. Add rosemary, thyme, and salt and pepper to taste. Simmer for 20 minutes.
